Zucchini
Also known as baby marrow and courgette, this versatile summer squash is
beautifully tender with a fresh, delicate flavour. Zucchini can be yellow,
green or light green, and generally have a similar shape to a cucumber.
Inhabitants of Central and South America have been eating zucchini for
several thousand years, but the zucchini we know today is a variety of
summer squash developed in Italy. The word zucchini comes from the Italian
zucchino, which means a small squash.
Seasonal Availability
Zucchini are available all year round.
Serving Size
½ cup cooked zucchini provides one
serving of vegetables.
