Watercress

Watercress is a hardy perennial European herb (Nasturtium officinale) of the family Cruciferae (mustard family), found in or around water.

 

Watercress has dark green, fleshy leaves with small white flowers during late spring and summer.

 

The slightly peppery flavour of the leaves comes from the plant’s mustard oils, which are released when chewed.  The ‘bite’ that watercress delivers makes it a popular addition to sandwiches, salads, salsas, pesto, soups and garnishes. The Romans called watercress “nasturtium”, which means “twisted nose.”

Watercress is available all year round.

 

Serving Size

 

Two and a half cups of chopped, raw watercress (85g) provides one serving of vegetables.
