Lime
Limes are a small citrus fruit, with green skin and flesh and an oval or
round shape. Limes are smaller than lemons and have a more pungent flavour.
During the 19th century, British sailors were issued a daily allowance
of citrus in order to prevent scurvy. They were initially given lemons, and
later switched to lime, which was not as effective at preventing scurvy but
led over time to the nickname "limey" for all Britons. This beneficial
effect was due to the high vitamin C content of citrus fruit.
In cooking, limes are valued for the acidity of their juice and the
floral aroma of their zest. It is a very common ingredient in authentic
Mexican, South-western United States, Vietnamese and Thai dishes. It is also
used for its pickling properties. Lime extracts and essential oils are
frequently used in perfumes, cleaning products, and aromatherapy
